Sean the Chef

Please don't be intimidated by cooking Indian food the recipes sometimes look long and complicated but usually the method is really simple, Another great tip is that you can buy ginger, garlic already minced in tubes now i find then really easy to use and take away the hassle of grating them your self !!

 
  Quick and easy Aloo 


 
 
This is a really easy to do potato dish that is packed full of flavour, perfect for the lamb dish to follow  
 

3 Large potatoes peeled and cut into large dice 

2tbs Oil  

1 tbs Cumin seeds  

1 tbs Chili powder  

1 tsp Coriander   

1/2 tsp Turmeric 

1/2 tsp Garam masala  

2 Tomatoes peeled and chopped  

250 ml cold water  

  


 
Method   


 
Heat the oil in a thickly based frying pan, add cumin seeds and lightly toss in the hot oil.  

Add the the remaining spices and the salt and mix well.  

Stir in the potatoes making sure they are coated evenly in the spice mix.  

Add the tomatoes and the water, bring to the boil, cover and simmer until the potatoes are cooked 
Serve with a natural yogurt .... 

 
 
Lamb Masala


1k lamb neck fillet cubed 

 This is a great cut of meat with awesome flavour and the bonus is that it is mega cheap marinade.  

1tsp ground ginger  

1tsp coriander  

1tsp cumin  

1tsp chili  

1tsp turmeric  

1tsp garam masala  

1tsp cinnamon  

1/2 tsp salt  

1 tsp lemon juice 

1tsp oil 

  

 
 
Method  

Mix all the above ingredients in a large bowl making sure the lamb is completely covered in the spice mix, allow to marinade for around 2 hours for the spices to infuse the meat.  

Soak 10 wooden skewers in cold water for 30 Min's, thread the meat on to the skewers and place under a pre heated grill for 8/10 minutes turning once.  


 
Quick and easy chicken curry

 
Warning this recipe is hot, tone it down by leaving out the fresh chili, to make it even more simple to make replace the tomato's with tinned and  use a spice paste available from most Asian shops !! 

 
 
2tbs oil  

2 onions chopped  

3 cloves of garlic grated  

1 red chili chopped and seeds removed  

1 tbs madras curry powder  

1 tsp paprika 

2tbs cumin seeds  

1tbs cinnamon  

4 skinned chicken breasts seasoned with salt and pepper and cut into large dice  

2 tomatoes peeled and chopped  

1 tbs tomato puree  

4 tbs coconut milk  

1 lemon  

  


 
Method. 

 
 
Fry onion in a large frying pan with the oil, cook until soft but with no color  

Add garlic, chili and spices and stir well 

 cook for 2 mins on a high heat add the chicken making sure the spices cover the chicken really well  

Add the tomatoes and puree and bring to the boil simmer for 10 minutes, add the coconut milk and Cook for a further 5 mins  


   


I had to include a dessert, this is not mine i had to look around for this idea but i recon its super easy to make  

 
 
Coconut Brafi

 
 1 cup of desiccated coconut  

3/4 cup caster sugar  


1 cup of milk  

2 tbs ghee ( clarified butter you can buy it from most super markets )  

1/2 tsp ground cardamon  


Heat a large pan and add 1 tbs ghee, add the coconut and fry until it  looks dry  

Add the sugar and milk and bring to the boil, add the cardamon powder and simmer until the mixture begins to thicken
pour into as shallow tray and allow to set in the fridge 
Cut into bite size cubes and enjoy
